To make this easy recipe, you need 1 zucchini and 2 potatoes grated, 1 cup oats flour, 1 teaspoon baking powder, 1 teaspoon black pepper, a handful of coriander leaves, 1 egg, and some salt for seasoning.

Make a coarse blend of grated potatoes and zucchini along with coriander leaves, then mix with an egg, spices, and flour to make a smooth batter.

Take a baking tray, place a parchment paper, nicely pour a ladle full of batter. Repeat with the rest of the batter, you may have to do this in batches.

​Hung curd sandwich

To make this sandwich, take 1 cup hung curd, ½ cup low-fat fresh cream, whip them together, till they turn smooth. In the meantime, grate carrots, cucumber and finely chop the onion, parsley, green chilies.

Lastly, boil sweet corn kernels with a dash of salt, drain the water. Add these corns to the rest of the creamy mixture along with the veggies. Then season the creamy mixture with Italian herbs, chili flakes, salt, and pepper. Toast bread slices and serve them hot!
